Ravines Vineyard was established on the upper west side of Seneca lake near Geneva.
They produce still, sparkling, sweet, white, red and rosé wines and even spirits!
They use Riesling, Chardonnay, Gewürztraminer, Pinot noir, Cabernet Franc and a bit of Merlot, Valvin muscat and Vignoles (hybrid).
These wines are great too with an European style, especially for the Riesling where we find back the minerality and the aromatic expression.
For the reds, the use of new oak barrel is left over for the use of big «foudre» to preserve the fruity character and give less oaky notes.
A great discover again, Finger Lakes wines are really underestimated…
We really enjoyed the Sparkling brut 2011 (50/50 chard + Pinot Noir), 6 years of lees ageing that give fine brioche notes and really silk and delicate bubbles.
